In this class, she offers new takes on traditional dishes including Couscous-Stuffed Peppers, with feta, chick peas, carrots and raisins drizzled with a creamy herb sauce, Lasagna Primavera, a lighter version of the familiar dish with fresh mozzarella, herbs and garden vegetables, Crispy Baked Chicken with Hazelnut Breadcrumbs and Sage, and for dessert, Apricots Cooked in White Wine with Vanilla Bean and Basil, served over Olympic Mountain Madagascar vanilla ice cream.
