At the Olympia Country and Golf Club, Executive Chef Juan Gomez makes sure members and guests alike are treated to a five-star experience that matches its stunning waterfront and mountain-view setting for all meals big and small. Food and Beverage Manager Heather Wilson explains that, “Members absolutely love Juan and appreciate his talent and work ethic.” While some chefs focus on tried-and-true classics, Chef Gomez and his team design their menus to keep up with culinary trends, as well as satisfy members with their favorite items, says Wilson. “That being said, the Chef and I try our best to keep everything up to date, so we do slight changes to classic items or items we bring back seasonally,” she adds.

This applies to meals in their sit down Terrace on the Green restaurant or more On the Go settings, which can be ordered by calling 360.350.0929 or from the #8 tee box while golfing. With rotating specials and tremendous skill and creativity, there’s something for everyone.

When it comes to larger events, they provide banquet amenities for businesses, retreat, reunions, receptions and even kid’s parties. These can include linens, audio-visual materials, a dance floor, and even shuttle service to and from the guests’ cars. Mix things up by adding a golf package to your bundle turning the annual fundraiser into an exciting corporate tournament.

For weddings, Wilson and the team can become your one-stop shop as well. “Our historic facility can accommodate your wedding and reception for up to 250 guests,” says Wilson. “With a picturesque backdrop of Mount Rainier and Puget Sound this is a location of which dreams are made. Whether you envision a celebration that is traditional, trendsetting, festive or formal, our wedding planners will assist you in planning your unforgettable storybook wedding.”

A sample wedding menu, for example, might include hors d’oeuvres like halibut cakes with fresh romesco and gremolata, spinach and goat cheese tartles or traditional Italian bruschetta. For a dinner buffet there can e a carving station of prime rib with a cognac horseradish sauce and pork tenderloin with an apple-ginger sauce and the classic buffet specialties. These include pan-seared Northwest salmon with champagne beurre blanc, chicken piccata with lemon caper sauce, and seasonal salads and vegetable side dishes.

And don’t worry, Chef Gomez and the kitchen staff are experts at kid cuisine too. Include a buffet of all their favorites like chicken fingers and fries or hot dogs with all the gloopy fixings.

Have dietary restrictions or special requests? Wilson and the dining staff are happy to help. “Something that surprises our members and catering clients it that we are very accommodating in so many ways,” she shares. “I am always happy to tailor menus to the client’s needs and preferences, even when that means offering foods that might be out of our regular wheelhouse.”

This adaptability comes from skilled culinary professionals. “I lucked out that our Chef, Sous Chef and Saucier all have so much experience and talent that they are able to adapt in that way and pull off wonderful surprises,” says Wilson. “We serve all fresh, made-from-scratch food, so it is very easy for us to accommodate different diets and preferences in the restaurant for our members as well. We can do gluten free, Keto, dairy free, any allergies, vegan or vegetarian at any given time.”

Foodservice is truly an industry where everyone chips in and helps. After more than a year of restrictions, diners are excited to return to their favorite haunts for that special meal or finally hold long-postponed celebrations. “I hire staff that can help in as many places as possible,” says Wilson. “When the machine starts moving, it takes all hands-on-deck to make it run smoothly, so all of us do everything!”
