The evening will feature a specially curated Pacific Northwest Tasting Menu highlighting locally sourced beef and seasonal ingredients:
Amuse / Starter: Northwest Beef Tartare with smoked sea salt, cured egg yolk, pickled shallot, fried capers, charred brioche, and micro arugula
Small Plate: Seared Beef Cheek with nettle salsa verde, shaved radish, and crispy fingerling potato chips
Pasta Course: Short Rib Agnolotti with caramelized onion, porcini mushrooms, brown butter, sage, and Rogue Creamery blue cheese
Main Course: Ribeye Cap grilled over alder wood, paired with horseradish scalloped potatoes, roasted wild chanterelles, and huckleberry demi-glace, garnished with crispy leeks
Dessert: Hazelnut & Marionberry Panna Cotta finished with hazelnut praline and local honey
