Brewery City is willing to take a chance on new flavors and unexpected combinations on the menu. The Breakfast Pizza uses The Hob Nob’s (Tacoma diner owned by the same family) famous zesty sausage gravy base topped with mozzarella, savory sausage, crispy bacon and fresh green onions. If possible, you might refrain from eating the last piece to take home for tomorrow’s breakfast.
Another debuting pizza is the Buffalo Fajita Chicken with bold A1 ranch sauce topped with fajita spiced chicken, creamy mozzarella, red onions, green peppers, sweet corn and black beans. It’s a crowd pleaser.
How about The Big Dill?! It began as an idea, then became an experiment in the kitchen, and then was put before the team for tasting. “My staff loved it,” says Jaden Miller, who is the general manager at the West Olympia location. The Asiago cream base is covered with mozzarella and cheddar cheeses with dill pickle chips and savory applewood-smoked bacon. It’s finished with a sprinkle of dill, parmesan cheese, a ranch drizzle and crispy potato chips. Customers of all ages have been pleasantly surprised with the taste combinations. Its popularity has led it to remain on the menu and it’s become a popular lunch request.
Pizza crust at Brewery City is your choice of the original hand-tossed or thin dough. Others may choose the gluten-free and cauliflower crust option. Toppings range from A to V or
artichokes to vegan cheese. Meat and/or vegetable lovers have many options. It’s fine if you are not quite in the pizza mood. You can select from numerous sandwiches, calzones or have soup, salad and bread.
Try the buffalo chicken salad with cashews, shredded cheddar, tomatoes, green onions and a ranch and blue cheese blend. The spinach salad features red onion, candied walnuts, dried cranberries with a raspberry vinaigrette. The menu does change, so it can be fun to see what’s new or try something you have not had before.

Brewery City Pizza Listens to Its Customers
The Harvester is a pizza with roasted butternut squash, bacon, caramelized onions, mozzarella, garlic, rosemary, goat cheese, red pepper flakes and balsamic reduction finish. It started as a special offering, but it was so well-loved it now remains on the menu. Be sure to let them know what you like on the menu.
Dedicated Staff at Brewery City
“Basically, I love pizza,” laughs Roland Jung, who is the general manager at the Tumwater location. He’s been working there for 33 years. That’s a long time. “It’s like the Golden Rule,” he explains, “It is good product and good people.” Roland likes serving his customers, friends and community members with food he likes. His is proud of his team, too.
After serving in the military for 10 years, Roland joined Brewery City. He was a delivery driver, a dishwasher, a chef supervisor and worked his way to become GM. When the ownership changed, Roland was pleased to stay on. “I have been treated very well,” he says. Over the years his children have worked there. “Their friends came in and worked. I was fortunate with hiring,” says Roland. For him, it is a large family working together under one large umbrella. “They have been hard working and making their way,” he adds.

Jaden’s story with Brewery City Pizza is similar to Roland’s. It started when he was 18 and began work under Roland. He also began as a dishwasher and ‘oven-guy.’ He made pizzas, too. “My grandparents owned a pizza place, and I have been tossing dough since I was seven,” he says. As he learned more about the business and grew his experience, he became a general manager.
“Tumwater has really grown, yet it is still a small community,” muses Roland. He appreciates people supporting small business owners. “It still tickles me to connect with people and see them enjoying pizza.”
