Gina Young gently places brisket inside a smoker with hickory smoke flavors, letting indirect heat gently turn the raw meat into tasty morsels over the course of many hours. The owner of Dickey’s Barbecue Pit in West Olympia, Young appreciates the long-held, traditional recipes that create authentic, slow-cooked barbecue.

Four year ago, Young opened the West Olympia location of Dickey’s Barbecue Pit. Her brother, Rob Williams, joined her on day one as the General Manager. “He has been with me since the beginning and I rely on Rob as my right-hand man,” says Young.

Placing family first, Young thrives as a small business owner serving the same recipes that have been used since the restaurant was established in 1941. “We cook all of our meats slow and low,” says Young.

Dickey’s Barbecue Pit smokes all meat on-site, delivering the freshest barbecue flavors directly to your holiday table. Young is enthusiastic about the holiday meals offered by Dickey’s. “We can prepare just your smoked meats or we can do the entire meal,” she says.

Make the holiday season easier by ordering online and having Young’s team prepare authentic barbecue for your holiday.

While smoked turkeys are quite popular in November, Dickey’s also offers smoked, spiral cut ham and new to the menu this year, prime rib. Plan your menu around a Cajun fried turkey this year. Pick sides that compliment or switch to a themed holiday dinner that highlights southern flavors. “We can smoke your meat or supply the complete meal for your holiday gathering,” says Young who notes that Dickey’s consistently sells out and encourages early ordering.

Dickey’s sources only the highest quality meats, ensuring your holiday table has a juicy, tender turkey, ham or prime rib as the centerpiece.

Along with delicious, melt-in-your-mouth holiday meals, Dickey’s can also cater your party, complimenting a festive event with a delicious buffet. “Full-service delivery makes our catering services simple to plan,” says Young. Quick online ordering for buffet catering, box lunches, and full-service catering showcases the various menu options along with price quotes.

Dickey’s catering menu is expansive. Pick your meat and then your home-style sides. My recommendations – Texas style chopped beef brisket and southern pulled pork matched with creamy coleslaw, barbecue beans, and green beans with bacon. For a small fee, Dickey’s will also bring you party-goers drinks and delicious desserts.

With quotes coming back within 24 hours, you are sure to be a hit with your party planning crew. Young notes that catering quotes can also be matched to your budget and accommodate any dietary needs. Presto – instant party success from Dickey’s Barbecue Pit for an intimate party of ten or a posse of hundreds.

Dickey’s Community Involvement

Gina Young loves being a small business owner in Olympia. Her favorite part – getting involved in the community. Photo courtesy: A Smile Like Yours Photography.

While operating a small business is crucial to Young, family comes first. Community involvement and being an active part of her two children’s lives is Young’s top priority. The locally owned, small business contributes to Barbecue Boots & Badges, a national organization that supports law enforcement, firefighters and their families.

Young also delivers food to nearby fire stations, sending a tasty note of thanks for their service. “Both of my brothers are volunteer firefighters,” says Young. Williams serves at the Griffin Fire Department when not working at Dickey’s or spending time with his one-year-old daughter.

Young also participates in the savings cards sold by Capital and Olympia High Schools. The discount cards enable athletics teams at local high schools to fundraise and the cardholders redeem the savings at local merchants, including Dickey’s Barbecue Pit. Punch the Dickey’s stamp for a free sandwich when you buy a drink.

Other support from Dickey’s Barbecue Pit goes to the Oly Rollers, Relay for Life and St. Mikes.

“What I love about being a small business owner is participating in the community,” says Young. “I get to interact with so many different parts of the community.”
