Meet Your South Bay Pub and Eatery Family

Your favorite pub is truly a home away from home. They know your name, preferences and whether you come to mingle with others or quietly recharge body, mind and spirit. In a sense, neighborhood treasures like the South Bay Pub and Eatery are as timeless as they are welcoming.

Researchers in the U.K. estimate the first pubs began as Roman watering holes in 43 AD. By definition, a pub “is not just a place to drink beer, wine, cider or even something a little bit stronger, it is a unique social center, very often the focus of community life in villages, towns and cities throughout the length and breadth of the country.”

South Bay Pub is exactly that. With free popcorn, drinks galore and a kitchen turning out mouthwatering meals seven days a week, they’ve been a family-friendly fixture in the area since 2011. And it shows. “This was the best wintertime we’ve ever had,” owners Eric and Suvantha Dickerson, Keith Lampard, and Mark Christensen admit. “We love and thank our community, local customers and staff!”

Chef David McGoldrick

Chef David has been with the Pub nearly two years. Local to our area, he’s spent nearly 30 years in kitchens around the region. He loves South Bay’s family atmosphere and creative freedom where he has a free hand to use the knowledge he has picked up cooking professionally. He has a passion for amazing breakfasts and the pub classics diners have come to expect.

Cook Dillan Lightburn

Dillan is coming up on his first anniversary with South Bay. He’s a proud member of the cooking staff. He say he loves that from day one you are treated like part of the family. This welcoming atmosphere combined with creative freedom is a combination he’s happy to be part of.

Shayla and Janelle

Shayla’s a relative newbie to the Pub, having started as a server and bartender in February 2018. “I’m still learning, but enjoy making drinks and getting to know the locals,” she says. A Bellingham transplant, she returned to the Olympia area to attend college towards work in the dental hygiene field. “It’s good to be back,” admits Shayla. “Everybody’s been really personable.”

Olympia-native Janelle has been with South Bay for three years and agrees. “That’s what’s great about Olympia; once you’re here, you love it! This is a great place to work with beautiful, delicious food.”

Pub Manager Tyler Wood

The Pub opened in 2011 and Tyler joined that staff not long after. He’ll celebrate his sixth year anniversary with them soon and has been the owner’s “right hand man” since the start. “Because we are a bar we put some people off,” Wood says. He has helped bring in kid’s menus, coloring books and other family-friendly options. He also organizes special events, charitable benefits, and monthly live music.

Events for Everyone at South Bay Pub

Whether you’re a regular or first-timer, South Bay Pub and Eatery has a busy spring calendar. Every Thursday come for $2 bottled beer and $1 off bartender’s choice whiskey shots. They’re also featuring many local breweries, with a changing supply on tap via rotating Pint Nights.

In the summer, they host barbecues and a beer garden on their outdoor patio. “It’s always a big hit when the sun comes out,” say staff. Enjoy lazy weekend breakfasts, beer tastings and more.

For the third year in a row the Pub will participate in Dining Out for Life on Thursday, April 26 with 25 percent of receipts donated towards HIV and AIDS programs and organizations.

During Spring Arts Walk, April 28 and 29, they’re hosting a mini Arts and Crafts Show-In from 2:00 p.m. to 6:00 p.m. They’ll have bands each day as well as artists and artisans with art for display and sale. This event came from a customer suggestion and the owners thought, why not?
