Congratulations to Iron Rabbit Restaurant and Bar owner Christian Skillings, as his team celebrates 10 years of serving fresh, seasonal locally-sourced cuisine.

A 10-year anniversary is a milestone that many businesses strive to reach. Christian Skillings, owner of Iron Rabbit Restaurant and Bar in West Olympia, has figured out the recipe for success. Iron Rabbit is celebrating the 10-year mark of serving inventive cuisine and cocktails using fresh, locally sourced ingredients.

To celebrate 10 years in business, Skillings is giving Iron Rabbit a face lift; new interior and exterior paint, restroom upgrades and new lighting in the bar and restaurant will enhance the dining experience, and an expanded kitchen will give the staff more room to work their magic. Additionally, this fall diners will find an expanded wine list and some new menu items featuring more great, locally sourced meat, seafood and produce.

The new décor, menu and wine list will come with some other changes as well. “We want to elevate the experience, provide more diverse menu options,” said Assistant General Manager Crystal Kampling.

The team is one of Iron Rabbit’s secret to success, according to Kampling. “The people we hire are super dedicated and stay longer than usual in this business,” she commented. “We have a great team.”

The excellent customer service and delicious food keeps people coming back to Iron Rabbit. When asked what she likes about doing business in this community, Kampling answered, “I like how personable everyone here is. It’s like having them come into your own home.”

Since opening 10 years ago, Iron Rabbit has focused on offering locally sourced products as much as possible. Both menu items and draft beers rotate to feature the best of the season. Appetizer and entrée specials feature fresh and seasonal ingredients.

Iron Rabbit takes an active role in supporting organizations in our community. They sponsor the free Monday Movie Madness nights at West Central Park and sponsor the Rabbit Barn at the Thurston County Fair. In late October, the Iron Rabbit will also be sponsoring the fall breakfast that raises funds for the Family Support Center of South Sound. They also support the Olympia Farmer’s Market, and will be serving their house-made root beer and a new cheesecake recipe at the Taste of the Market on August 18.

Iron Rabbit serves lunch and dinner 7 days a week, as well as brunch on Saturday and Sunday. The menu offers many options, including juicy burgers, pasta, sandwiches, fresh salads, steak, seafood and many vegetarian choices. Brunch offerings range from my personal favorite Chipotle Eggs Benedict to fluffy pancakes, breakfast burritos and omelets featuring local Steibrs Farms cage-free eggs. The kids menu offers choices to please every palate, including my kids’ favorite Tillamook White Cheddar Mac & Cheese. Parents will be happy with the side choice of apple slices or carrot sticks.

Iron Rabbit’s signature Rabbit Rewards program gives diners points for their purchases. Two hundred points earns a $10 certificate for free food and beverages. Tuesdays are double point days, and senior citizens age 60 and over get a $10 certificate for every 100 points. No membership card needed – simply sign up here and give your server your phone number when you pay your bill. Rabbit Rewards members receive exclusive email offers, birthday rewards and will be getting a special postcard for a free dessert in August to celebrate Iron Rabbit turning 10.
