Just west of Littlerock Road in Tumwater is a welcoming family restaurant called The Brick on Trosper. Local residents may remember the location as Trospers. About six years ago Mike Barrett and his wife, Kandra, bought the business and ran it for two years under the old name before remodeling it and changing it to The Brick on Trosper where they have been serving families for four years now.
The Brick has a large menu with wood fired pizza cooked in a brick oven, steaks, salmon, halibut, and a large selection of appetizers. Barrett says the menu “has something for everyone.” There is a lot to choose from. He says the pizzas are very popular and so are the steaks. “We hand cut our own steaks. We do a baseball cut,” which is round and thick.
Wood fired ovens get hotter than gas ovens, heating the pizzas to around 600 degrees, which helps it to rise and gives it a crisper crust. There are 16 different pizzas on the menu plus a huge selection of toppings for build-your-own and a wide selection of appetizers.
The Brick features a lunch buffet every weekday 11 a.m. to 2 p.m. with a variety of hand-tossed pizzas, different styles of pasta, Caesar salad and beverage for $7.59 or make it $8.59 for one of their eighteen beers on tap.
From morning to night The Brick on Trosper has specials for everyone. Breakfast specials include homemade biscuits and gravy with hashbrowns or country potatoes, chicken fried steak and eggs covered in sausage gravy, a variety of egg dishes, steak and eggs, breakfast burritos and more.
There are daily specials such as family night every Monday, steak night on Wednesday and Taco Tuesdays. Happy hour is daily from 3 to 6 p.m. and again from 9 p.m. to 1 a.m. with half price appetizer and drink specials. Happy hour prices are good in the bar and in the restaurant. “The bar is more of a sports bar,” Barrett says. There are 11 big screen TVs to watch the game. The décor is classy, with poured concrete counter tops.
There are also special events such as Superbowl parties, kids parties and other sports parties, with a party room that seats up to 40.
